Salad
"This
classic dish is still a success.
The sweetness of the apples
and grapes work alongside the
tart dressing".
PREPARATION TIME:
25 minutes
SERVES: 6
INGREDIENTS:
4 South African Golden Delicious
apples
1 tbsp lemon juice
60g walnut halves
2 celery stalks, finely chopped
24 green grapes, halved and
any seeds removed
pinch sea salt
2 cloves garlic, finely chopped
2 tbsp mayonnaise
2 tbsp natural yoghurt
freshly milled black pepper
1 tbsp chopped fresh tarragon
PREPARATION:
Core the apples and slice thinly.
Toss in lemon juice to prevent
browning. Add the celery, grapes
and walnuts to the bowl.
For the dressing: mix together
the garlic and salt. Add the
mayonnaise and natural yogurt
and black pepper. Stir in the
tarragon.
Pour the dressing over the
salad and toss gently before
serving with a generous sprinkle
of freshly milled black pepper.
