Sweet and Spicy Apple Topped Toast

"This is one for the children. They can cut the bread into any shape. And who cares if they pinch a few apple slices on the way".

PREPARATION TIME: 5 minutes
COOKING TIME: 10 minutes
SERVES:
4-6

INGREDIENTS:

2 eggs
150ml semi skimmed milk
2 tbsp caster sugar
1 tsp cinnamon
½ tsp nutmeg
6 thick slices of bread
1 tbsp sunflower oil
Knob of butter
2 South African Golden Delicious apples, cored and sliced

PREPARATION:

Cut the bread into shapes with a pastry cutter.

Beat together the eggs and milk.

Mix together the sugar, cinnamon and nutmeg.

Pour the egg into a shallow bowl. Dip in the bread until soaked in the egg mixture.

Heat the oil and butter in a large frying pan and shallow fry the slices of bread, two at a time, 2-3 minutes on each side until golden brown.

Remove and drain on kitchen paper. Sprinkle with the sugar and spice mix.

Add the apple to the hot pan and toss the apples until they just soften and colour slightly.

Serve the toast layered with the apples.
