Sweet Apple and Watercress Soup

INGREDIENTS:

25g butter
1 onions, finely chopped
1 tbsp medium curry powder
2 x 85g watercress
1 tbsp cornflour
570 vegetable stock
150ml double cream
250ml milk
3 South African Golden Delicious apples
1 tbsp lemon juice

PREPARATION:

Melt the butter in a large pan and cook the onions gently until soft but not coloured. Add the curry powder and cook for 2 minutes. Add half the watercress.

Mix together the cornflour with a little stock until smooth add to the soup with the remaining stock. Bring to the boil and simmer gently for 10 minutes.

Add the remaining watercress, reserving a few sprigs for garnish. Cook for a further 4-5 minutes.

Add the cream and simmer gently for 5 minutes.

Peel and slice two apples and place in the liquidizer. Pour the watercress mix into a liquidizer along with the milk. Process until smooth. Chill if serving cold. If serving hot, just bring back to the simmer just before serving.

When ready to serve, either hot or cold. Core and slice the remaining apple and toss in lemon juice. Place a pile of sliced apple in a bowl and top with the soup. Garnish with a sprig of watercress and serve.
