Golden Apple and Cheese Filo Parcels

INGREDIENTS:

2 South African Golden Delicious apples, peeled, cored and diced
1 tbsp lemon juice
150g Gruyere cheese, diced
16 sheets Jus-Rol filo pastry
50g butter, melted
2 tbsp tomato chutney

PREPARATION:

Preheat the oven to 200°C, 400F, gas mark 6.

Defrost the pastry as instructed on the packet.

Toss the apples in the lemon juice. Drain and add to the cheese. Mix together the apple and cheese.

Cut the sheets of filo into 16cm square. Brush one square with the melted butter and top with another square of pasty at a 90 ° angle to form a star shape. Brushing again with melted butter.

Place 1 heaped tbsp of the apple filling into the centre of the square and top with half a teaspoon of chutney.

Pinch up the pastry to form a pouch. Repeat with 14 more sheets of pastry to make 8 parcels. Bake in the oven for 30 minutes or until crisp and golden browned. Serve at once with extra slices of apple.
