Golden Apple Topped Ginger Pancakes

"Delicious when stacked and served with a drizzle of maple syrup.".

PREPARATION TIME: 5 minutes
COOKING TIME: 15 minutes
SERVES: 6

INGREDIENTS:

200g plain flour
1 tsp baking powder
2 tbsp sugar
1 tsp ground ginger
375ml milk
2 large eggs
45g butter, melted
2 tsp oil
2 South African Golden Delicious apples, cored and sliced
Maple syrup, to serve

PREPARATION:

Sift the flour and baking powder into a bowl. Stir in the sugar and ginger. Make a well in the center.

Whisk together the milk, eggs and butter and pour into the flour. Mix until just combined; do not over beat.

Heat a flat griddle or heavy bottom frying pan oil lightly. Add a spoonful of batter, easing into rounds. Cook over a medium heat for about 3 minutes until bubbles appear on the surface of the pancakes. Flip them over and cook for a further 2-3 minutes until risen and golden. The batter makes about 12 - 14 pancakes.

Transfer to a plate and keep warm.

Heat the griddle or frying pan until smoking. Brush the apples slices with oil and cook until lightly browned.

Stack the pancakes and serve topped with the apple and a drizzle of maple syrup.
