Golden
Apple and Raisin Muffins
"A
muffin for any occasion".
PREPARATION TIME:

COOKING TIME:
20 minutes
MAKES: 12 muffins
INGREDIENTS:
250g plain flour
2 tsp baking powder
½ (half) tsp bicarbonate
of soda
pinch of salt
pinch of freshly grated nutmeg
15g caster sugar
2 South Africa Golden Delicious
apples, peeled and diced
4 tbsps clear honey
1 lemon, finely grated
1 large egg, lightly beaten
200ml buttermilk
PREPARATION:
Preheat the oven to 180°C/Gas
4. Line a muffin tray with muffin
cases.
Sift the flour, baking powder,
bicarbonate of soda, salt and
nutmeg into a large bowl. Stir
in the sugar and raisins.
Mix together the honey and
lemon zest and add to the flour
mix.
Roughly stir in the egg and
buttermilk until the batter
is just mixed but still a little
lumpy.
Spoon into the muffin tins,
filling each to the top. Bake
for 20 minutes or until golden
brown.
