Golden Apple Ice Cream

"Frozen apple and custard – can you go wrong?!!".

PREPARATION TIME: 10 minutes
FREEZING TIME: 4-5 hours
SERVES: 4-6

INGREDIENTS:

2 South African Golden Delicious apples
1 tbsp lemon juice
300ml semi – skimmed milk
300ml double cream
2 tsp vanilla essence
4 large egg yolks
60g caster sugar
4 tbsp crème fraîche

PREPARATION:

Peel and core the apples. Cut into 1cm cubes. Toss in lemon juice to avoid browning.

Place the milk, cream and vanilla essence in a heavy-bottomed pan and bring to the boil.

Combine the egg yolks and sugar until light and creamy. Pour the milk into the egg mixture mixing well.

Wash the pan and return the cream and egg mixture to the pan. Heat over a low heat until thicken. It must not boil or it will curdle. Leave to cool before whisking in the crème fraîche.

Pour into an ice-cream maker and churn. When it is beginning to firm, add the apples. Chill until freezing.

If you do not have an ice-cream maker, pour the chilled custard into a plastic box and place in the freezer. After an hour, take it out and whisk it using a hand whisk. Repeat this process 4 times at 30-minute intervals, adding the apple when the ice cream is beginning to firm.

Scoop and serve.
