Sweet
Apple and Goat's Cheese on Toast
"The
sweet apple dressing is such
a delicious combination with
the tart goat’s cheese".
PREPARATION TIME:

SERVES: 4
INGREDIENTS:
3 South African Golden Delicious
apples
1 tbsp lemon juice
1 teaspoon of clear honey
½ teaspoon of wholegrain
mustard
1 tablespoon of cider vinegar
4 tablespoons of extra virgin
olive oil
salt and black pepper
2 x 100g packs Somerset Goat's
cheese
4 thick slices walnut bread
180g bag salad leaves
PREPARATION:
Peel one apple and chop finely.
Toss in the lemon juice to avoid
browning. Remove from the lemon
juice, reserving the lemon juice.
Mix the chopped apple, honey
and mustard with the cider vinegar.
Add the olive oil, a spoonful
at a time, and mix until the
dressing thickens. Season to
taste.
Halve the goat cheese rounds
and place in the dressing and
leave for 5 minutes, turning
over once.
Preheat the grill.
Toast the bread on 1 side under
the hot grill until lightly
browned. Turn the slices over,
place a round of goat's cheese
on top of each and return to
the grill. Reduce the heat and
cook for 2-3 minutes until the
cheese bubbles, softens and
starts to brown.
Peel the remaining apples and
slice thinly. Toss in the lemon
juice and then with the salad
leaves.
Divide the apple and salad
leaves between 4 plates. Place
the toast and cheese on top,
and spoon over the dressing.
Serve immediately.
