Sweet
Apple Chicken Curry

SERVES: 4
INGREDIENTS:
4 chicken breast, skinned and
cubed
2 tbsp plain flour
salt and pepper
2 tbsp sunflower oil
1 onion, sliced
3 tbsp chunky mango chutney
6 ready to eat dried apricots,
halved
3 South African Golden Delicious
apples, peeled and diced
3 tbsp medium curry paste
400ml can coconut milk
50g sultanas
50g cashew nuts
PREPARATION:
Mix together the flour and seasoning.
Add the chicken and toss until
lightly covered. Heat half the
oil in a pan and cook the chicken
for 10 –12 minutes until
evenly golden. Remove the chicken
and put to one side.
Heat the remaining oil in the
pan and cook the onion for 3-4
minutes until soft but not coloured.
Add the mango chutney, apricots
and half the apple. Add the
curry paste and coconut milk.
Bring to the boil, reduce the
heat and simmer for 20 minutes.
Add the remaining apple, sultanas,
cashew nuts and the chicken
and cook for a further 5 minutes
or until the chicken is thoroughly
cooked and the sauce thick and
glossy.
Serve the chicken curry with
rice and naan bread.
