minutes
SERVES: 6
INGREDIENTS:
3 South African Golden Delicious
apples, peeled and sliced
570ml double cream
6 large egg yolks
5 tbsp caster sugar
PREPARATION:
Place the apples in a pan with
two tablespoons water, cover
and cook gently for 3 minutes
until soft, shaking occasionally.
Remove from the heat and stir
in icing sugar to taste. Leave
to cool, and spoon into 6 ramekin
dishes.
Heat the cream into a saucepan
until boiling. Meanwhile blend
the egg yolks cornflour and
2 tbsp caster sugar in a bowl.
Pour over the hot cream, stirring
all the time with a wooden spoon.
Return the mix to the saucepan.
Heat very gently, still stirring
until the custard has thickened.
This should only take a minute

the ramekins over the apple.
Cover and chill, preferable
overnight.
When ready to serve, sprinkle
the remaining sugar evenly over
the surface of each custard,
then caramelise with a blowtorch
or under the grill.
