Pure Gold Apple Brulee

"A ramekin of delicous apple brulee - heaven sent".

INGREDIENTS:

3 South African Golden Delicious apples, peeled and sliced
570ml double cream
6 large egg yolks
5 tbsp caster sugar

PREPARATION:

Place the apples in a pan with two tablespoons water, cover and cook gently for 3 minutes until soft, shaking occasionally.

Remove from the heat and stir in icing sugar to taste. Leave to cool, and spoon into 6 ramekin dishes.

Heat the cream into a saucepan until boiling. Meanwhile blend the egg yolks cornflour and 2 tbsp caster sugar in a bowl. Pour over the hot cream, stirring all the time with a wooden spoon. Return the mix to the saucepan.

Heat very gently, still stirring until the custard has thickened. This should only take a minute or two. Pour the custard into the ramekins over the apple. Cover and chill, preferable overnight.

When ready to serve, sprinkle the remaining sugar evenly over the surface of each custard, then caramelise with a blowtorch or under the grill.
