Golden Delicious Apple Cake

"A delicious snack at any time of day".

PREPARATION TIME: 20 minutes
COOKING TIME: 75 minutes

INGREDIENTS:

250g South African Golden Delicious apples
2-3 tbsp lemon juice
110g butter, soften
225g light Muscovado sugar
2 eggs
1 tsp ground cinnamon
¼ tsp ground cloves
225g self raising flour
½ tsp salt
2 tbsp walnuts

PREPARATION:

Preheat the oven to 180º C/350º F, Gas Mark 4.

Grated half the apples and cored and dice the remaining half.

Toss the apples in the lemon juice to prevent it becoming brown.

Cream the butter and sugar until light, then beat in the eggs, one at a time.

Sift the flour, salt and spices into the mixture and fold in gently with the apples.

Spoon into a greased 20 cm/8 inch round cake tin and sprinkle over the walnuts.

Bake for about 1¼ hours until golden brown and cooked through.

Cool in the tin for 10 minutes then turn out onto a wire rack to finish cooling.
